Tuna & Vegetable Pasta Bake

Ingredients

Half a leek, finely sliced
Whole zucchini, grated
Zest of one lemon, plus juice
One bunch of asparagus, cut in thirds, with the end and middle thirds also sliced in half lengthwise
Pasta - I used a packet of fresh fettuccini
Finely shaved parmesan
Basil pesto
Fresh baby spinach leaves
One 425g can of tuna, drained **OR** one can of cannellini beans, drained
Capers
Preserved lemon (optional)

Method
